I am a fan of steel cut oats.  Cooked for about an hour.  Keep adding more water if getting too thick.  Finally add milk and let reduce and above.  Serve with 1/2 half and real maple syrup.

I have been playing with the Instapot.  About 3 to one ratio water to steel cut oats.  6 minutes high pressure-then natural release.  I would like to add some dairy to make then creamy.  It seems to get kind of cool if the lid is off the Instapot.  Only tied it a handful of times.  I like no stir - but think they could be better.

Sometimes I will add salt and sometimes add homemade vanilla extract.  I am not sure that it adds much.  Would also welcome good but faster oatmeal recipes.    Prefer not the instant or flat rolled oats -  but willing to try all tips.  Thanks.

I add a splash of 10 of milk, maybe a sweetener, and slurp away as I peruse the forums.

This is today's bowl, with some sort of special raisins my wife got me for Christmas.

If anyone has a favorite hot cereal recipe, I am all ears!
I love hot cereal.  Regular oatmeal is good, steel cut oat is better.  I like it straight up 1 cup still cut oats 4 cups of water a dash of salt and a bunch of raisins. Maybe some apples.  My secret weapon to make it is to cook it in a double boiler - no stirring no boil over no sticking to the pot.  Put it on, get the water below to boil and turn it down to a simmer and walk away for 30-45 minutes.  I'm not really a huge fan of the hot cereals with lots of seeds and stuff in it - we have a brand up here called Sunny Boy.  I used to eat it as a kid but when I was in first grade on a cold winter morning one of the kids in my class puked all over his desk.  The horrible, matronly (I'm being generous and kind) teacher came to see what was going on and said in her bright cheerful Scottish accent, "Oh my, it looks like you had Sunny Boy for Breakfast this morning!"  Done - Sunny Boy never passed my lips again.  Its crappy anyway, too seedy and has a bad flavour.  Usually that of rancid flax seed oil because its never really fresh or stored properly.  I love breakfast.

Oh my gosh, that is a funny yet horrible story! What a thing to say, and I agree, I'd never eat that again after that comment!

Have you folks tried oatmeal pancakes? Super easy and fast, and you'll think you died and went to heaven. The recipe I used for years was in an Oster blender manual and I can't find it. But it used some brown sugar inn the mix and everything was done in the blender. One issue with oatmeal pancakes... No gluten, so they are fragile.

But I did find this: https://www.therecipes.info/oat-flour-pancakes-recipes

Unfortunately oats are a no-no for me today since I'm in ketosis.

Ah hah! Found it! I put it in the computer!

Oatmeal Pancakes

For a different pancake. This makes a thicker pancake. Absolutely delicious!

1 ½ cups flaked or quick cooking oatmeal made into oat flour
(Quaker Oats “Old Fashioned” type is one )
OR 125 grams of any type oats
(I haven’t tried groats into flour yet, but that would be 3/4 cup of groats)

****

3/4 cup milk or slightly more evaporated milk
1 egg
2 TBL oil
2TBL brown sugar or succanat
1 TBL baking Powder
1/4 tsp salt
Oat flour

Make oat flour by putting into the blender and “grinding” until it’s flour. Remove from the blender and put ingredients into the blender in the order listed below the asterisks. Cover and “blend” until smooth, not long. Allow to stand 5 minutes before using. Cook on griddle. Serve fresh off the griddle with butter and maple syrup.

I’ll try that.

Marko, please let me know how you like it even if it's terrible, but it won't be. Other syrups might also work, as long as they don't step on the oat flavor. Drizzled honey might work but nothing as heavy as buckwheat honey.

A sort of strange but good brunch today: spaghetti with steamed broccoli, shredded Parmesan, and a touch of Korean kimchi, topped with a fried egg.

For Saturday brunch today we had rice with sausage, shrimp, water chestnuts, broccoli, and green onions, seasoned with stir-fry sauce.
