Since we had no big plans for the New Year last night and today is full of college football bowl games, I decided it would be a good time to make some Hot Italian Beef sandwiches.  This was a 1st-time cook for me which i found on YouTube while searching a completely different recipe Smile.  Served it on some fresh Italian bread with white cheddar cheese (recipe called for provolone but white cheddar just seemed "right" to me).  Overall, it was a great cook and definitely one that will find its way into our rotation.  The meat turned out so good that even the Mrs went back for seconds!

That looks great! No grilling here tonight, it’s -30C with a -40C windchill. I believe the Celsius and Fahrenheit scale’s converge at -40. A bit chilly.

Spit Roasted Lamb 

To prepare, the fresh lamb is seasoned inside and out with garlic and spices and the gut is sewn shut. 
After mounting on a spit, a patient soul is assigned to rotate the whole lamb in front of the fire for several hours until it is cooked through and falling off the bone. 

A regular basting with melted butter produces crispy skin.
