Evidence to the contrary, I don't always cook with bacon... but local chicken, wrapped in hickory smoked pepper bacon and thrown on the grill. Winner, winner chicken dinner.

I normally don't like to go back to back with meals however my wife insisted that I grill chicken again. This time, "pickled" jalapenos in tequila to go under the bacon. Crowd please again but I think I need to burn 'em next time as I really wanted to grill some fish this weekend Smile

100% agree and it actually added some really nice flavor- sliced super thin lengthwise and threw in a bowl of Don Julio. Wrapped under the bacon then on the grill.

Bruce, you're killin' me! It's been since '72 since I've had a proper Jagerschnitzel! Love the stuff!

You've lit a fire in me to make it.

But i gotta tell you the bacon mushroom gravy isn't the way I ever had it in the Rhineland. :-) Sounds good though, and what isn't better with bacon? Interesting! 2 thumbs up on that one.

My favorite sauce for the Jagerschnitzel is to saute mushrooms in a light garlic butter, and reduce heavy cream until it is the consistency you want for sauce. A thickly accented old restauranteur from Austria we frequent told me is is sort of an "occasion" schnitzel there. Served with spaetzle and cabbage, OMG.

Mmmmm, spaetzle. So easy to make and so delicious. In a pan to slightly fry them (after boiling), then add some farmers cheese and herbs, and correct the seasoning. Yumm. Or just fried in butter to slightly brown will also do.

It's not even 9a here yet and I am craving schnitzel! Looking and sounding great gentlemen- @"Bruce" I saw something similar on FoodNetwork a long while back and meant to make it at some point. You've inspired me- looks delicious.
