If you don't have access to affordable high quality veal, turkey breast cutlets are a very reasonable substitute. We normally use them for "veal" parmigiana and no one has been the wiser, but we always 'fess up.

Yes, I can "see" pork as being a good substitute. It's as mildly flavored as turkey breast. I can't use it though for our guests. Our really good friend who we have over frequently would know just a few hours after eating that she ate pork. It doesn't play nicely with her GI tract. Me? I can eat anything, but she knows.

Who doesn't like nachos? Home made refried beans, tomatoes, avocado, green onion, jalapeno, cheddar and some tortilla chips from Trader Joe's.

An ode to the humble side salad. We have had a small salad with dinner for as long as I can remember. Nothing fancy. In this case some spring mix, arugula, tomatoes, pecans [they are a little fancy with honey and dash of cayenne] and a meyer lemon vinaigrette my wife threw together.
