I need the veggies for my bowels. The meds I'm on for my heart disease doesn't play well with the GI tract. I find veggies help a lot. The ground flaxseed I take just isn't enough. I know what medication does it. It's elective and I can quit taking it at any time, but the results I get by taking it far outweigh the GI problems.

I was going to "make" that beef, but in the end I can say I was "inspired" by it.

I made too many changes to say that I made it.

- meat: top sirloin cap (something like that)
- seasonings: a little of everything... Butter, ranch (liquid), A1 sauce, thyme, oregano, smoked paprika, salt, black pepper, coriander, garlic powder, onion powder, chicken bouillon (didn't have beef in the fridge), mustard and mustard powder
- touch of apple cider vinegar and some whiskey (Old Bardsville bourbon)
- garnishings: chopped cabbage and split some baby carrots on the side, and bacon on top

RESULT: I will be doing that again!

Made some homemade chipotle cream sauce and I'm going to do another slow cooked meat in a day or two.

Haven't had the best Keto week ever, but still trying my best. Weight still in the 160 to 163 range. So, a solid 5 lbs lost and lots more energy lately.

Surprisingly, I haven't missed my beloved Rainier beer much in the last few weeks. I have enjoyed some good gin mixed with a zero calorie/zero carb/zero sugar carbonated lemon soda.

Im happy to report that I have perfected the recipe for a Keto Thai Fried Rice.
You need course-grained grated cauliflower, thinly sliced beef/chicken/pork...fish sauce, soy sauce, chillies, basil leaves, spring onions, salt and black pepper.
I'll post a pic soon.

Edit: Turned out great. Used boneless chicken thigh meat. You could sprinkle some cilantro on it if you wanted to go full Instagram.

This is a one person recipe so you'll need to adjust upwards to serve more.

Ingredients:

• 1 medium sized cauliflower coarsely grated
• 150gm of boneless chicken thigh fillet cut into strips (breast meat cooks faster than thigh)
• Quarter of a small cabbage finely shredded (you can use any suitable vegetable diced: eg. red bell pepper)
• Half an onion thinly sliced
• 2 Pods finely chopped garlic
• 2 sprigs of spring onion chopped (group the chopped green tips separate from the chopped base part)
• Thai or Italian basil leaves (Optional)
• Salt & Pepper
• 2 finely chopped green chillies, half pod finely chopped garlic, lemon juice, fish sauce (mix together for the dip)

Method:

1. Sprinkle salt and pepper on the chicken strips and keep aside for about 30 min
2. Heat 1 tablespoon olive oil in pan/wok on a medium flame
3. Drop the chicken in and sear it until it browns, turning over as necessary
4. Add garlic and toss, same with onion
5. Add a small drop of dark soy sauce for colour (don't overdo)
6. Toss till well mixed.
7. Add about 1/4 cup of water, cover and let it cook till you have a nice reduction and chicken is cooked
8. Turn flame on high, add the grated cauliflower and toss it around for a minute
9. Toss in the sliced cabbage and stir further for another minute or so
10. Drizzle a wee bit of fish sauce (1tsp) and mix it all nicely
10 Add the chopped base of the spring onion (you can also add basil leaves OR asian greens at this point)
11. Toss it all for another minute so it's well mixed and turn off the flame
12. Garnish with chopped spring onion greens

Enjoy!

PS. As always feel free to experiment. You can use sliced beef, chopped sausage and even prawns instead of chicken,
just gotta adjust the cooking time (esp for prawns)

Steamed broccoli is so basic so I was in search of a way to cook it. Enter butter fried broccoli. It has everything going for it, tasty, a bit different and easy.

I've made it with the scallions and the capers and that was good, but give the scallions a bit of time to get rid of the crunch for me (more than I gave it). Tonight I just made it with the capers, that was good too but I like broccoli.

I had dinner tonight with the protein being eggs and sausage and the veg was the above broccoli. It was very different approach to dinner for me but it was good. There was no way I could eat all that I cooked. But leftovers are easy to warm up.

Tonight (tomorrow night) pan fried (Jacques Pepin) chicken thighs. They couldn't be easier to cook using his method and the skin is always perfect. Just get the heat right.
