Hercules34 myself I couldn't tell a lot of difference between the Scalloped and the regular Safety Bar, but usually opt for Scalloped, for me.
    The suggestion above of a Hybrid plate might give you a good sampling of 2 versions.  Maybe depends on how you get along with Open Comb razors.

From least to most aggressive:
solid bar
scalloped
hybrid (combo of scalloped and open combed)
open comb

With build your own options, each of those plates can be ordered in M, H, or EH options.

I have plates in all these options but I tend to use the solid bar versions the most as there is less blade exposure. I tend to use Nacets the most in this razor, so it is very efficient.
I shave every other day.

I use the M or H solid bar plates in Ti for most of my shaves.
If I need more blade exposure, I will use the scalloped plates.
I am not a fan of the OC plate myself as it has too much blade exposure for me. I have the H OC plate in Ti and the Hybrid brass plate (which is type M).

My order EH plate in Ti just arrived. Ordered May 14th. Little more time to wait, but Yates 921 is one of best value for money on market today. LIke H plate, EH should be even better

Jake Yates has scaled back production and gone back to a full-time job, hence the long waits on orders. So, I think the chances are slim he will be thinking about offering alternative finishes.

Well I get that as being self employed with wife, and kids is a tough life.  Nice having pay check each week, not having to sweat orders, praying raw material will be delivered on time, and all the pride of ownership nonsense.  That pride of ownership is really being slave to your business.
