Last night I cooked something I've never done before. I cooked up 2 honey/orange duck breasts, and we had them on a bed of plain fried rice and a salad.

I never sautéed duck breast before, but it won't be the last time. It was easy, delicious, and extremely tender. Next time I want to do plain duck with no marinade. The honey burned before the skin was crisp. If I want honey and orange I can do that after the skin has crisped, but last nights had been marinated by the farm.

Brian, I love good duck and have eaten it in better restaurants. As a child, my folks would get a duck at the supermarket and it would be a delicious Sunday dinner. I don't see it in supermarkets that much anymore and even if it was there, I'm sure every bit of flavor would have been bred out of it.

Freddy check the frozen food section. I find Maple Leaf Farms duck breast in the 2 pack. If it's in Maine you must have it available. That's what the above duck was. I also find frozen whole duck (Long Island (Pekin) duck) and goose. Yes, it's very mild in flavor.

I've been kicking around the idea of raising some meat ducks for a few years now. Maybe Muscovy which is reputed to be like veal. For sure we have enough slugs to help feed them. Ducks love slugs, so I'd get a 2fer or 3fer... a few eggs, meat, and pest control. The reason I haven't? The housing. They will play in any water they can find that includes their water dish. That pretty much means a concrete floor in my mind as it will always be wet.
