Good looking food gents!

Alphege, I mentioned to the wife not long ago that I hadn't cooked a stew all winter. I missed it! But I've cooking other things... chicken and pork. We're beginning to crave beef.

Today a light lunch of a sandwich with avocado, chickpeas, slivered carrots, minced red onion, herbs and spices, and spinach leaves on toasted dark sweet bread. Next time I think we'll add some crab.

Last night we invited a single lady friend of ours over for dinner. I'd told her of a way to make a superior chicken parm' faster and with no additional complications over baked. Her truck crapped out on her so we went to her. After a few adult beverages and watching the loons on the lake I commenced to making the chicken parm'. (fried chicken breast patties out of the frozen food section, additional basil and romano or Parm' cheese with provolone over that, then under the broiler to melt. A few TBLS of hot tom' sauce on top to complete it.). All the flavor of chicken parm, but with crispy (not soggy) chicken breading. Of course real pounded and breaded chicken breast could be used for a better result. I was demonstrating an easy way for a single person to make a somewhat "gourmet" meal for one person. FWIW, I f I had a fresh basil leaf it would e great under the melted provolone.

Of course, I'm kidding but so many of the foods and preparation you mention seem so interesting.  As a single person, I like simple but good tasting food.  This chicken Parmesan sounds delicious so I shall have to give it a try. Smile
