I have this pet theory (yet unproven) that soap will "degrease" the hairs, which breaks down the surface tension from the natural oils on them, and aids in wetting them. The wetting should make them softer.
I suppose the term I should use for the soap is "surfactant".
As I said though, there is no peer-reviewed research on my theory that I am aware of. It's more from stuff that I picked up in traditional Lithographic Printmaking.
