Anyone have a tasty pickle recipe? I'm not too interested in any of the sweet varieties. The crispier, the vinegar-ier the better.
I've read that Kirby cucumbers are some of the better options to make pickles with, but what's your favorite?
Let's not forget the juice.... it has to be tasty alone! I often pour in some pickle juice into a bloody mary/michelada and also use it as a chaser for some whiskey.

My best friend does that when he drinks anything other than scotch or bourbon

The bar tenders tend to look at him crazy. But they have the juice there!

And I swear, it helps prevent the hangover BIG TIME! Smile And if I've already got a hangover, a few sips of pickle juice do wonders for me.

If you're looking for a tart pickle, you want a mustard pickle. Give me time to find "my" MP recipe that I used to make by the bucket full. I'm salivating at the thought. The making of them couldn't be easier.

I was going to search for it my books, but on a hunch I found it online. It went by exactly the same name.

The recipe claims that the pickles keep for weeks. That's incorrect. They keep for months without refrigeration. I would make them and keep them in my shop, covered, all winter. Be sure to weight them down* to keep them under the brine. Also, the recipe linked to indicates that it's make a batch and that's it. Not so. As the cukes were harvested I would add them to the 7 gallon food grade bucket and top it off with fresh pickle to cover. It couldn't be simpler or easier. Be advised that it's a very tart pickle, as is any mustard pickle recipe that I've ever eaten has been. You either like that level of tartness or you don't. You'll never find mustard pickles made by a big commercial pickle company for that reason. The first bite will definitely put a pucker on the lips and a squint to the eyes if you like that sort of pickle. The tartness can be controlled by diluting the pickle, but I can't guarantee that they won't spoil if someone does that since it's the acid % that keeps them from spoiling.

* for a weight I welded up 2 stainless steel "grids" of 1" bar stock with a handle (I think they're 1"; it's been awhile since I used them.) . Only one is required per bucket and it's heavy enough to do the job. Mine are actually too heavy, but they do get the job done. Mine could be 1/2 the weight and still work.

Gareth, If you go down to the shopping center off Kanan-Dune between Agoura and Thousand Oaks BLVD, left of T.O there used to be a tiny hole in the wall Jewish store serving the local Chabbad community. They had kosher pickles. Rhineland Deli USED to sell a German
recipe pickle but their food has gone in the opposite direction of their prices.
