I am a big fan of peanut butter.  I recently decided to try a supermarket natural brand.

The ingredient list is Roasted Peanuts and Salt. None of the extra fat, sugar or emulsifiers found in the national brands.

When you open the jar it smells like fresh roasted peanuts. Since it lacks emulsifiers it separates with an oil layer floating on top. It took quite a bit of effort to stir it back in. That was on first use after sitting on a supermarket shelf. Subsequent uses require a quick minimal stir.

It is thick but runny. If you are not careful it falls off the knife before you reach the cracker. It tastes great. I love the taste but my wife is not a fan.

It is very "dry" meaning it makes me thirsty and I need plenty of milk to help wash it down. I can not think of a reason why this should be but it does require a drink to keep eting it.

So when all is said and done I think I will go back to Skippy. We both like the taste and it is just easier to handle.

I prefer the type of peanut butter you show here, Phil. Smuckers makes one and Trader Joe’s does it in peanut butter and, I believe cashew and/or almond butter, which I find delicious. You are correct about the difficulty of that first mix of oil and the ground peanuts/salt. However, once done, keeping it in the refrigerator means it doesn’t have to be stirred again.

Teddy is good but as with all natural nut butters it separates. IMO that's how you can tell that you have the good stuff that's worth eating, not everyone would agree with me on that. But we make our own now. Peanut, almond, hazelnut, walnut, pumpkin seed, sunflower seed, the list goes on and on, they all make "butter". The only "problem" with our homemade is that I can get it so fine that it's too runny from the oil in the peanuts. So I shred some peanuts and add it to the runny stuff to firm it up for spreading. About 50/50 is right. It also helps to prevent separation or so it seems. Maybe I eat it too fast for it to separate. Some day I'm going to try coconut butter.

The other day I made homemade nutella. For someone in ketosis the commercial version isn't edible due to the sugar. I have more work to perfect it, that much is very clear to me since it tasted fine but is too runny. Big Grin I added a small amount of MCT oil to it to get it to blend and that was a mistake.

I get the kind with no added salt (just peanuts), pour off about half of the oil before stirring, then refrigerate.

I used to have a special gizmo for stirring it (like these), but they don't work with all jars...

I used to get Arrowhead Mills until the price went through the roof. I've gotten Teddy, and it's good, but Smucker's Natural is my go to now.

As soon as you get it take a butter knife and stir the oil into the PB until it is well mixed. Refrigerate.

As you use it keep it in the fridge until you get about a third of the way, then it won't separate if left out.

Smuckers chunky is easier to spread than other chunky PBs. 

To avoid a dry mouth eating peanut butter a small amount of jam or preserves topping it will cut the dryness inherent in the product. 

DON"T ever pour off any of the precious oil !

I've been using the Skippy Natural, but could do without the sugar. I'll check Wally world out and look closer ( with the reading glasses or phone on camera while enlarged).
It's always good to know what we eat.

Today I revisited the "nutella" that I made. The roasted walnut was actually quite good and last wekend I didn't care for it very much. It's still too runny, time isn't going to help that but time definitely helped the flavor.

I absolutely love peanut butter...can eat it straight out of the jar with nothing else involved...the chunkier, the better, imho! we always buy the natural stuff, though I will say that I find the oil that sits on the top to be a royal PITA to mix in.

Thats true but if you keep it in the fridge you only have to mix it once.  Have you tried any of the Adams' dark roasted?  Crunch of course...
