I had the second bathroom renovate last year and replaced the fan with a better one on a timer switch and its so quiet that I can shave with it on and not really notice it. It might be easier for you to replace the fan than to muck around with the wiring to add a second independent circuit and switch.

We've suffered from the roar of the builder's grade fans that were initially installed in our house for 20 years. The newer, better quality fans out there are not only quieter but they're more efficient at drawing out moisture too. The old loud fans barely moved any air - all show and no go. And its not like a better quality fan is exactly going to break you either, we're not talking new furnace prices here.
