My morning slug from the mug was Jim's Organic Coffee, 2021 Holiday Blend, hand ground by me, and done via pour over. Black. Wonderful mouth feel, delicious medium roast, tastes the way I think good coffee should!

Why, Yes, I am a coffee snob!!

Guys, I have always wondered why decaffeinated coffee always seems to taste so flavorless. What is in the caffeine that affects the flavor?

Various studies have looked at this.

I haven’t looked at the research but I think it’s a combination of the fact that the beans are soaked in a solvent (water or other) to remove caffeine prior to roasting and that might/must have an impact on some of the other aspects of the bean that contribute to flavour and goodness and that only a twisted coffee roaster with no business sense would take a superior bean and upon cupping it, say to himself “this would make an awesome decaf”. I think the best beans will get roasted in a way that will allow the roaster to realize the highest price and that’s not going to be decaf. Just my thoughts.
