I have really sensitive skin as well. I'll share what I'm doing in case it might make a difference.
Like you, I'm new to wet shaving. The only blades some far that work for me are Feathers with a very, very light touch. I have sensitive skin and thick whiskers, so I need something sharp for cutting with a light touch for the skin. I really am letting the weight of the razor do all the work. I also use shaving oil on every pass and it has made a big difference.
I started with Taconic brand oil. Then I saw a recipe for home made that is four parts olive oil and one part mineral oil. The article claimed it was better than what you can buy and based on my limited experience with one brand they are correct.
Also, I shower before shaving in the morning and wash my face followed by three minutes of moist warm towels before shaving in the evening.
