So I gave my face a 5 day break and shaved last night. I took advice and tried a cold shave. I did my normal 3 pass from the jaw line up, and a 2 pass for my neck (with grain and across). I did cold rinses in between and finished with the alum. I will try again in 3 days or so to see if I don't get razor burn (which didn't happen this time).

Same here. I'm a head and face shaver. My face generally gets 2 WTG passes every other day. My head gets 2 (1 WTG, 1 XTG) about 5 times per week. I still get a slightly closer, and slightly more comfortable shave if I skip days, but after a year of practice, I can now shave daily if I need to with little to no discomfort.

Everyday, with Sunday being "optional". I have very fast growing facial hair and its very dark too.... that combination pretty much forces me to shave daily. One year for the first week of "movember" I didn't shave for a week and it was astonishing how full a beard I had after a week.... personally I could never wear a beard, it drove me nuts and on the 8th day it was gone. I no longer participate in "Movember". The bright spot is that I rarely, if ever, get irritation... I'm glad I "have to" shave daily, nothing better than a BBS shave and alcohol splash to start the workday!!

I will usually shave every two days. If I shave every day it causes irritation on my neck.

Well, I wouldn't say that was normal to experience that amount of discomfort the next day after a shave.....If that happening I would suggest that you are over doing something.....Whether that would be angle issues, pressure issues, soap issues or other causal factors, I wouldn't know, but sure sign of razor burn or a scraping of the skin for sure.. .
I don't shave very day, but on the occasions that I do I would either rotate from an aggressive to a milder razor....I find that I can have a daily three or four pass irritation free shave with a milder GEM Bullet Tip or a GEM Junior Lather Catcher for example....
I can also shave daily with a more aggressive razor like maybe a Schick Type E Injector or a GEM Clog Pruf, but a two passer and touch ups would suffice here with maybe a three passer very other day......Once I discovered how to map my face in terms of my patterns of whisker growth I have stopped getting the symptoms you have mentioned.....
I think that we need to be familiar with our whisker growth patterns and razor and blade combos and that's without even mentioning technique and of course we are all different...
Another thing that we have to remember is that Daily Shaving is a Relatively Modern Thing that has been pushed at the consumer as a normal activity by consumer markets very much like taking a bath and or showering and brushing your teeth every day....
The amount of people that prematurely wear out their teeth through using modern abrasive toothpastes daily is astounding....People are reducing their capacity to fight against Bactria through daily washing .....These are all Modern Cooperate Market oriented Habits .......
The only job where it was a criminal offence ( Section 69, Army Act ) not to Daily Shave was when I served with the Royal Marine Commandos......I have since been employed in many so called Middle Class Jobs.....For example, Social Services, Counselling Services, University Lecturer, and in the Education Department in both Primary & Secondary Schools and an array of other jobs and have never been asked or dug up for not shaving on a daily basis.......
Maybe they knew that I would have Tweaked their Noses for asking.....
