How can I delete my DFS account?

Ditto, call me naive but if someone doesn't want to use the forum, simply stop coming and you have no presence here. Old posts will remain regardless.

With the advent of the EU's GDPR mandates, and other countries establishing or looking at related policies, the "Right to be forgotten" has pushed most platforms to offer the ability to remove your personal data, which is why I suspect the personal erasure option is offered under User Settings. 

Personally, I feel that posts in a public forum become part of a shared conversation, which blurs the lines of data ownership. I think the right compromise (where there are no other overriding legal or forum policies) is what seems to happen in some platform bans. The posts remain in place for historical purposes, but the attribution of the poster's account now points to an anonymized account name (eg 001sswddrx), which takes the place of the original poster's account name. This allows the account owner to be removed (or deactivated) from the system but retains an anonymized version of the historical posts that preserve the context of historical conversations.

Correct. The original user data is scrubed and replaced with randomized data, like user1234.

I think the personal data erasure option might effectively accomplish this since it appears to also result in permanently disabling your account. This is under User Settings from your profile name drop down,

Why not just stop visiting the site ?

I lost interest in posting about wetshaving gear from 2016 until 2020 or so, and simply just stopped visiting the wet shaving forums in that period.

I'm now back into it, after I found a new interest in DE razors, and after The Shave Nook went down RIP, I just logged in here and started where I stopped 5-6 years ago.
