Happy Thanksgiving to all. We're too old now to mess with a whole turkey, so we had turkey roast and gravy, with corn casserole and stuffing.

I was invited to a friend's home.  Her daughter and she cook for an army even though there were only four of us.  The sunset from my friend's house was quite spectacular,  too.

I hope everyone had a safe and thankful Thanksgiving day.

Churchilla, we have cut back also and have done so for over a decade now. In the past I would cook up a storm but for 2 people it just didn't seem worth it. I do cook a turkey because we love turkey. In fact I'll cook 2 more turkeys. Then I strip the meat from the bones, vacuum seal it and freeze it. Then we have turkey for throughout the year.

Our simplified Thanksgiving dinner? What did it consist of? Turkey, dressing that is loaded with veggies and this year it had homemade low carb bread in it. Homemade cranberry sauce, and gravy. All low carb to keep me in ketosis.
