ShadowsDad, you have to stop posting photos like that Rueben because I gain weight just looking at them. (Just kidding but, boy, does that look delicious. )

It's a Rueben I made from the pictured no knead bread. (Now I'm salivating and I'm not at all hungry. )
I'll be honest...I don't know if I've ever had a Reuben sandwich before.

andrewjs18, you're joking!
They are absolutely delicious and Brian's here is making me want to rush to my favorite deli to get one (though I doubt it would be as good as his).

sadly, I don't think I am. if I ever had a Reuben, it certainly didn't stand out to me.

The basics of the traditional Rueben are a sandwich of corned beef, sauerkraut, Swiss cheese, on rye that has been spread with Russian dressing and toasted. From there, all sorts of substitutions can be made to suit. Brian used his no knead bread, which would be perfect, in my opinion. Some folks use pastrami instead of corned beef and some even use knockwurst for the meat. The sandwich is versatile, if nothing else.
The knockwurst variation is one I've never had. I've had it with the Russian dressing, or have had it sub'ed with mustard. I've also had it with pastrami rather than corned beef. It's all good. I bet kielbasa would be good as well.
Andrew, they're worth trying if you ever see it on a menu.

I bet it would, too. I can almost taste it.
