I love it! I've got a big chunk of walnut with a story behind it as well - have a blank ready but just haven't gotten around to turning it. One of my favorite woods!

I have a really huge chunk of Black Walnut, but it's still occupied being a tree in my yard.

Happy2  People sometimes get some grief for using polyurethane (say, on antiques or vintage guitars) but this is a perfect application for it.
Did you sand between coats of poly?

Yes, I found it’s best to sand with very fine sand paper between coats
