I recently had a mild heart attack and it has been the impetus for me to dust off some recipes that I developed years ago for use today.

Brians Milk Substitute is one of those.

Brians Milk Substitute
Great for folks who are lactose intolerant, or just for those who prefer not to drink cows milk. This is the best milk substitute I’ve tasted. Makes great chocolate milk too! For a heart healthy diet this has no butterfat, even 2% milk contains more butterfat than is on that sort of diet.


Does it taste like cows milk? No. But it's creamy and tastes good. If you want something tasting like cows milk it needs to come from the cow.


Ingredients:

6 raw almonds
6 raw hazelnuts
1 cup Raw Cashews
3 cups water, divided into 1 cup/2 cups
1 pitted medjool date*
Vanilla extract (optional)
sweetener (optional)

Put 1 cup of water in a blender. Take a 1 cup measure and add the 6 almonds and hazelnuts to it. Add enough raw cashews to fill the measure. Add to blender. Blend until virtually nothing remains of the nuts, this will take a few minutes and the mixture will get warm. Add remaining water, mix.

Taste. If desired add optional ingredients to taste. For a creamier taste add a few more cashews. Strain if desired, cool and serve.

*My last batch I added one pitted medjool date and that addition is a keeper. It both added a mild sweetness and additional complexity.
