One way to avoid coconut oil is to look for soaps that are 100% olive oil. Pure olive oil (the original castile soap) does a perfectly good job cleaning, but pampers the skin. If you and she are not vegan, you might also look for a pure palm, tallow or lard bath bar. Those two oils have a great mix of fatty acids that make for an effective cleansing bar but still offering the oleic acids that make olive oil so appealing.

Mixes of oil frequently including coconut because it causes a big jump up in the amount of bubbles and the cleaning efficiency even with just a small %. But you can also use castor oil to do the same thing in many recipes, so maybe you can find a mix like that.

This thread made me think about the fact that tree nuts includes coconut. I should come up with an "allergy friendly" no-coconut variety, aside from my pure olive.
