I know that mutton tallow has slightly different properties than other tallow types from my old blackpowder shooting days. It had a longer shelf life before going rancid and worked better as a bullet/patch lube than say beef tallow. The smell is stout however. It is also harder to find as obviously far more cattle are eaten in the USA than sheep. As a note, I tried a Stirling sample of their mutton tallow soap and it was magnificent.
