Brian, that sounds quite good. When I was in college many, many years ago, young and immortal and stupid, unworried about cholesterol, my roommate and I used to go to a local tavern and have pitchers of beer with a huge platter of great deviled eggs (probably 30 or more halves) made from pickled eggs. Those were the days, my friend, we thought they'd never end...

I still don't worry about cholesterol and have no problems (everything in moderation). Dietary cholesterol is actual difficult to become a problem since the intestines don't absorb it very well. The problem cholesterol is what our livers make. Too many folks limit the intake of fats that are actually beneficial in the belief that they're doing their body good.

That just reminded me... it's getting to be time for our trek to the coast for a pint of fried clams before the summer tourists arrive. Loaded with cholesterol but oh so delicious! While there I've been wanting to stop and get some fresh oysters from a farm. They can't be gotten any fresher.
