I've had bear 3 times by my count, 4 times according to the wife. Of the 3 that I remember it has tasted something like beef, one time it was much like pork.

Tip on moose or any deer species. Yes, they are lean, so they should be cooked rare or med' rare to keep the meat juicy. If you do obtain some bear be sure to thoroughly cook it until the blood is totally coagulated or further, like wild pig it can contain trichinosis. Take no chances with it.
